The method

  1. Mix and ferment dough 24-48 hours in the fridge.
  2. Stretch into a 12 inch round, top with sauce, cheese and pepperoni.
  3. Bake on a steel at 550 F for 7 minutes.
  4. Finish with oregano and slice into eight.
