Beer-Battered Fish Basket

Cod fillets fried in lager batter with chips and tartar sauce.

The method

  1. Whisk flour, baking powder and lager into a smooth batter.
  2. Fry chips at 325 F until pale, then again at 375 F until crisp.
  3. Dredge fish in flour, dip in batter, fry at 375 F for 5 minutes.
  4. Pile on parchment with tartar and lemon.
