The method

  1. Reserve 1/2 cup chickpeas; blend rest with tahini, lemon, garlic and oil.
  2. Toss reserved chickpeas in paprika and crisp in a hot pan.
  3. Spread hummus on a board, top with crispy peas and a drizzle of oil.
  4. Serve with pita and pickles.
