The method

  1. Brine chicken in buttermilk and hot sauce overnight.
  2. Mix flour with paprika, garlic and cayenne.
  3. Dredge wet to dry to wet to dry for craggy crust.
  4. Fry at 325 F until 165 F internal, drain on a rack.
