The method

  1. Slather pork with mustard, dust with sugar, salt and cayenne, rest overnight.
  2. Smoke at 250 F for 10 hours until probe slides in like warm butter.
  3. Rest 1 hour wrapped, then pull into shreds discarding fat caps.
  4. Pile onto buns, top with vinegar slaw.
